Our iberico bellota ham shoulder comes from 50% Iberian pork breed, raised in the Dehesa of Extremadura and have fattened up on acorns for at least 12 weeks in montanera time. Each pig needs 10.000 square metres (one hectare) of the countryside for itself to eat enough acorns.
We cure our ham shoulders air dried in natural bodegas (cellars) for at least 365 days.
The ham has a sweet aroma. The taste is rich, yet delicate, and releases a complex medley of flavours with an excellent balance.
Its taste is more intense than ham’s, which makes it better adapted to those palates accustomed to the strongest and most cured flavours.
Each portion has been hand carved by a Master Carver.
To enjoy it at its best, allow it to warm up to room temperature.
